From the Minneapolis Club Kitchen: Panna Cotta Recipe

The Minneapolis Club kitchen is renowned not just for its service and evolving menus, but for its consistent balance of variety and quality. Try your hand at one of our staff’s favorite creations with this delectable recipe straight from the minds of the Minneapolis Club kitchen.

Minneapolis Club Pastry Chef Ali Boril is always busy creating sweet confections and sweeter memories. Her panna cotta is a member favorite – a dessert rich enough to bring out the sweet tooth in anyone, made of sweet cream and yogurt molded with gelatin. Here’s how she makes it.

Panna Cotta

Ingredients

18 oz Heavy Cream
1/2 C Greek Yogurt
1/4 C Sugar
1 teaspoon vanilla
1 tablespoon powdered gelatin
1.5 teaspoons Salt
zest of one lemon and/or orange

Instructions

  1. Put all ingredients except gelatin into a pot and bring to a boil.
  2. Whisk in gelatin and continue stirring about one minute.
  3. Take off heat (strain if necessary), pour into serving glass or silicone mold.
  4. If serving in a glass, refrigerate at least 2-3 hours, or until the gelatin sets.
  5. If serving in a mold, freeze all the way and unmold.

Panna cotta mixture can be held in the refrigerator wrapped for 5 days or in the freezer for 3 months.

Shortbread Crust

Ingredients

2 C Flour
1/4 C Sugar
1 teaspoon Salt
8 oz Butter, cubed
2 oz water

Instructions

  1. Mix flour, sugar and salt in a mixing bowl.
  2. Add the cubed butter in increments until about pea sized. 
  3. Slowly add water and mix until a dough forms.*
  4. Roll onto a floured surface and cut desired shapes.
  5. Bake at 350 for 8-10 minutes or until light golden brown.
  6. Serve on the bottom of panna cotta, or use as a cookie if serving in a glass.

*If dough is too wet, add more flour. If dough is too dry, add more water.

Speakeasy Socializing

Fabulous Eats

Food stations from Executive Chef Håken Lundberg create a fabulous feast. Catch your fill of lobster and seafood in the Sun Room or wander back to the Lounge for the Carver and Sides Station, where a selection of meats and sides awaits. The Library hosts the Dessert and Cheese Board Station with a Chocolate Fountain and Small Dessert Bites, fresh creations from our very creative Pastry Chef Ali Boril. And of course, a coffee bar is available.

As you sip, nibble and mingle, try your hand at blackjack and three hand poker or leave your mug shot in the photo booth – everything a duke or dame needs to have a good time! At 9:00 pm, we roll back the rugs to cut loose on the dance floor. The first half hour features big band favorites, with Swing Dancers inspiring us through the evening. At 9:30 pm, George Faber & the Icons show off their musical genius as the contemporary tunes take over.

Joey & Genevievre: When a reception is about more than the venue

Weddings and receptions at the Minneapolis Club combine exceptional service and creative cuisine in an elegant setting for the perfect day. More than anything, we’re proud of the memories we help create. This is just one.

A great wedding reception is about more than where you host it. You should be able to appreciate the polish without stressing the details; you should be able to see the effort without seeing the strings. Genevievre Broche and Joseph Colianni learned that when they held their wedding reception on November 2, 2019, complete with white-glove presentation and a menu selection from Chef Håkan himself. Here’s what Suzie Colianni had to say about planning and holding the reception at the Minneapolis Club.

There are many choices that are made when planning a wedding. We couldn’t be happier that we chose the Minneapolis Club as the venue for Joey and Genevievre’s reception.

The Club handled everything with ease and grace. The guests staying in the hotel rooms were welcomed and made comfortable. We are so lucky at the Club to have such a personable and accommodating chef in Chef Håkan. We received many compliments from our guests about the Club and the delicious food. The white glove presentation of the entrees and the friendly servers were just perfect. Our expectations working with the Club staff were exceeded in every way. We can’t say enough about how wonderful it was to have a wedding at the Minneapolis Club!

New exhibition from artist Brian Sago blends science and art

Palimpsest, the latest installation in the Minneapolis Club’s Curtis Gallery, showcases work from local artist Brian Sago. A printmaker and photographer, Sago’s work blends science, math, botany and history, and he states that many images in the collection are inspired by dreams.

A palimpsest is a document that has been scraped clean to make way for new work, while faint images of the original remain. The 11 prints on display were created by hand-etching designs into hand-cut copper plates. “The prints in this exhibit stand as a bit of a counterpoint to the Edward Curtis prints on the opposite wall,” notes Sago, observing that both are printed using an etching press. “Knowing the exhibition space led to an interesting challenge in preparing and selecting the work,” he writes.

Sago elaborates:

The plates were made by reusing engraver’s copper, scraping down old images that had been etched into the plates, then cutting them into new, organic shapes.

It may not look like it at first, but there’s a lot of science that goes into these prints. The organic shapes were inspired by seed pods, tattered leaves and aged pieces of wood. Chemistry is required in the etching, craft-level precision in inking, wiping and printing copper plates by hand. There’s a nurturing aspect to both science and art that blends together in the 600-year-old technique of etching plates.

Plates were worked in part at Arms & Armor, a local blacksmith that specializes in reproductions of medieval tools. Many thanks to the blacksmiths there for lessons in using a plasma cutter to alter the shapes of the plates from the typical rectangle.

A native of St. Louis, Sago now teaches printmaking and photography at The Blake School.

“We wouldn’t change a thing”: A Minneapolis Club wedding reception story

More than anything, we’re proud of the memories we help create. Here’s one couple’s look back at their Minneapolis Club wedding experience – in their own words.

Matt and Maggie Thompson (née Craven) were married on October 12, 2019, at Our Lady of Lourdes Catholic Church in Minneapolis. At their reception at the Minneapolis Club, 287 of their closest friends and loved ones joined them to celebrate the start of their journey as husband and wife. At the end of 2019, we asked Maggie to share her thoughts about their experience at the Club.

We could not have chosen a better venue for our wedding reception than the Minneapolis Club. From our first meeting with Jodie through the morning after our wedding, the Club staff was kind, generous and incredibly organized. Our guests raved about the food, the staff and the venue. It was a lovely perk and very convenient to stay in one of the Club’s guest rooms the night of our wedding and to have our family and grandparents stay there as well. If we could do it all over again, we wouldn’t change a thing about our experience with the Minneapolis Club! And being a member, it’s special to visit the club now and reminisce about our wedding day.

“Water is life. My life.” Meet Member Lynn Broaddus

Q: When did you join the Minneapolis Club, and why was it important to you?

A: My husband Marc Gorelick and I were new to Minnesota and Minneapolis in 2017. Joining the Minneapolis Club seemed like a good way to meet people and to have a downtown anchor for our activities, both business and personal.

Q: What do you enjoy most about the Club?

A: We love meeting people, using the Club’s facilities and coming to events (especially when dancing is involved!). I especially enjoy the health and athletic facilities and use the pool on Sunday afternoons during the winter. For a real treat, I hope to work with Becky Goldberg for personal training. I attended her foot class recently – WOW!

Q: Describe your work with Broadview Collaborative. What makes it stand out and what does the future look like?

A: My tagline on Twitter kind of says it all: “Water is life. My life.” I’ve been working on environmental sustainability all my adult life, with a special focus on water for about half of that time. Through Broadview Collaborative, my consulting platform for the last five years, I’m able to provide insights on high-level trends in the water sector, as well as strategic guidance to philanthropists, investors, and non-profit organizations. I’ve been told that my perspective is unique, perhaps in part due to my openness to new ideas and my ability to connect people, problems, and opportunities.

Water is my passion in part because it belongs to all of us, and the Clean Water Act gives each and every person in the United States the standing to protect and defend their water. We’ve made a lot of progress on cleaning up our nation’s waters in the nearly fifty years since that law went into place, but we now face complex challenges that need new approaches. Climate change, agricultural practices, and urban intensification all create knotty issues that aren’t going to solve themselves. In Minnesota we see this through algae growth and fish die-offs in our precious lakes, as well as sediment and nutrient pollution in the Mississippi and Minnesota rivers that are a large contributor to the Gulf of Mexico’s dead zone. We are all connected through our shared waters.

Q: How is the Club helping you advance professional and personal goals?

A: My work is national, and my “office” is basically my computer and telephone. It’s nice to be able to work from anywhere, but ironically it can be isolating especially as a newcomer to a city. That’s one of the reasons I especially appreciate the Club’s drop-in office spaces. If I need to be downtown, I’ll often fill out my day by working from the Club and catching lunch or an after-work drink while I’m there. I appreciate having a place where I belong – literally and figuratively.

Q: Describe an extraordinary experience at the Club.

A: In early October I attended the breakfast session featuring Medaria Arradondo, Minneapolis Chief of Police. As expected, I learned about how the police force works as well as the challenges of financing and managing a major metropolitan police force. I also came away impressed with Chief Arradondo’s leadership and compassion. What turned it into an extraordinary event for me was hearing the questions and statements from Club members, several of whom previously served in police forces or the armed services. I have new appreciation for the diversity of experiences among our members, and the insights they bring to the challenges of public safety.

Q: What are your hobbies and passions?

A: I’m a want-to-be farmer living in a big city, with a little bit of space for gardening. Despite being on the road three weekends out of four, I managed to have my best vegetable garden ever in 2019, and (with help!) began establishing native, pollinator-friendly habitat in the rest of the yard. I also enjoy running, paddling, and bicycling. Marc and I love exploring Minnesota’s state parks, lakes, rivers, and trails. We try to get out for a camping trip once or twice a year, and each time we come home wanting more!

Q: If you could travel anywhere in the world, where would it be?

A: As someone who travels a lot professionally, being at home or at our cottage in Virginia is what I crave. That said, I do hope that I will have an opportunity to visit the countries of Africa at some point. I’d like to see the animals, but I especially want to meet people and to understand their lives and cultures, and to explore some of the continent’s ancient historical sites.
